More proof...

...that everything's better with bacon.

I make this salad when I want a light dinner that’s still filling and satisfying. This salad is kind of deceptive because despite the good nutritional value of the raw vegetables, the egg, bacon and sour cream are packed with calories. Oh well. It’s delicious anyway. It’s not traditional for salads to be dressed with sour cream in America but it is quite common in Russian and Ukrainian salads.

(Yield: 4 servings)

Ingredients:

Half a head of Romaine lettuce

1 tomato

1 red bell pepper

1 cucumber

1/4 red onion

1 hard-boiled egg, diced

2 strips of bacon, cooked and crumbled

2 tbsp chopped cilantro

2 tbsp sour cream

Salt/pepper


Chop all the vegetables and mix with the other ingredients. Salt and pepper to taste.

Of course everything is better with bacon :) Good thingg I don't keep kosher.

This really is a beautiful salad. That it has bacon is an added plus:-).
