Pork Stroganoff

Yes, this classic dish is usually made with beef but I like pork better.

There are countless Stroganoff recipes out there and this one is mine. It can be served any starch of your preference.

(Yield: 4 servings)

Ingredients:

1 lb pork loin

2 tbsp olive oil

1/2 tsp salt, 1/2 tsp pepper

1/2 tsp garlic powder

1/2 tsp dried thyme

1 large yellow onion, sliced

1/2 c sour cream

1 tbsp deli mustard

1 tbsp Parmesan cheese

1 tbsp chopped dill


Slice pork into 1-2”-long, 1/4”-thick strips. Heat oil in a sauté pan on medium heat. Add pork and seasonings. Sauté for 5 min, stirring occasionally. Add onion and cook for another 5 min. Then add sour cream, mustard and cheese. Stir, re-season if necessary, and garnish with dill.
