La Vie En...Gris?

Today was probably the coldest day of the season so far. It is currently 40F/7C, raining and very windy. I spent the whole day in school, running on cereal, a Red Bull and a Special K bar, and I couldn’t wait to get home and eat a normal meal.

This dish came to be as a result of a much needed fridge clean-up. And, I had to find a creative way to use up the rest of that spinach couscous. This is kind of like the usual chicken pilaf but using couscous instead of rice significantly decreases the cooking time.


(Yield: 4 hungry people)

Ingredients:

2 tbsp olive oil

1 ½ boneless skinless chicken breasts, cut into 1” pieces

¾ tsp poultry seasoning

¾ tsp paprika

1 yellow onion, diced

1 large carrot, diced

4 garlic cloves, sliced in half

2 tbsp white raisins

½ c canned corn

1 c chicken broth

¾ c couscous

2 scallion stalks

Salt/pepper


Procedure:

Heat the oil on high heat in a round-bottomed pan. Add the chicken and season with salt, pepper, paprika and poultry seasoning. Cook for 5 minutes, just until it is browned, and remove from pan. Reduce the heat to medium and add the onion and carrot. Cook 5 min. Add garlic and cook 1 more min. Add chicken back into pan and add the broth. Cover with lid and simmer for 10 min. Then add raisins, corn and couscous. Stir well and turn heat off. Cover with lid again and let stand for 5 minutes. Taste for seasonings and garnish with scallions. Voila!

This sounds delicious! Definitely gonna have to make it sometime soon. Ingredients seem reasonably cheap, too.
