Simple Scones


This recipe is very simple, so do not fear.
I like to make these scones with dried cranberries or apricots but you can use any dried fruits you like/have. You can also use chocolate chips.

So, you'll need:
2 cups all-purpose flour
1/3 cup white sugar
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
4 oz. butter, frozen
1/2 cup dried fruit of your choice
1/2 sour cream
1 egg

Start by preheating your oven to 400 degrees and freezing your butter (15 min. should do.)
Combine the first five ingredients in a large bowl. Grate in butter (sounds weird, I know, but it's not, I promise.) Mix in butter with your hands, just until it is combined. The mixture should resemble a course meal at this point. Then, mix in the fruit.
In a smaller bowl, combine sour cream and the egg and then add to the flour mixture. Mix everything until a ball forms. Be sure not to overmix because the scones will turn out tough.
Spread the dough out on a floured surface, into a circle about 3/4 of an inch thick. Sprinkle lightly with sugar and cut into 8 to10 triangles. Place on a cookie sheet about 1 inch apart. Bake for 15 min or until golden brown. If the bottom starts to get brown too quick, turn the oven down to 375. And then they're ready to eat. Bon appetit!
