Chicken Enchiladas

This was my first time making enchiladas at home and I think I did a pretty decent job. I did not follow any specific recipe.

(Yield: 8 enchiladas/4 servings)

Ingredients:

8 soft flour tortillas

2 poached chicken breasts, shredded

1 8oz can tomato sauce

2 garlic cloves, minced

2 tbsp chopped cilantro

1 large tomato

1/3 medium red onion

3/4 c shredded cheddar cheese

Salt/pepper


Preheat the oven to 400F.

Combine the chicken, tomato sauce, garlic, cilantro and a pinch of salt and pepper in a bowl. Set aside. Chop the tomato and red onion and combine in another bowl. Set aside.

Working on one tortilla at a time, place 2-3 tbsp of the chicken filling on the tortilla on the bottom half, roll up and place into a greased baking dish seam-side down. Repeat with the rest.

Sprinkle the enchiladas with the cheese and the tomato-onion mixture.

Bake 15 minutes, until the cheese melts.


Serve with sour cream, guacamole and/or salsa.
