Hidden Treasures: Couscous

Hello. Hope all is well : )

I was going through my computer and found pictures of this couscous, which I made about a month ago and never got around to posting. I must say I’m not the biggest fan of couscous; I find it bland and kind of hard to eat. Is it just me?

Either way, this was pretty yummy. The flavors of this side-dish are definitely more summery but delicious for any time of year nonetheless. And, it takes about 10 minutes to prepare, which is always a plus.


Side notes: • I used spinach flavored couscous but feel free to use the regular kind. • It only occurred to me now that bacon would be a lovely addition (isn’t it always though?)


(Serves 4)

Ingredients:

3/4 c couscous

1 c water

1 tbsp olive oil

bell peppers (I used orange and red,) diced

1 tbsp butter

About 1/3 c red onion, diced

2 tbsp white raisins

2 tbsp dill, chopped

Salt/pepper


In a medium pot, bring the water to a boil. (Meanwhile, sauté the peppers in a pan with the olive oil for about 5-6 min.)


Once the water is boiling turn the heat off and add about 1/2 tsp of salt, the butter and the couscous. Stir and cover with lid for 4-5 min until water is absorbed. Then add the onion, raisins and dill. Taste for seasonings and serve.


This was yesterday’s breakfast, BTW:


Strawberries, blueberries and banana with Greek yogurt and homemade granola. It was so pretty, I just had to take a picture.



P.S: Aren’t the Matisse-inspired dishes just lovely??

And, I might have some very good news in the near future ; )

I agree about couscous. It's like pasta--it absorbs the flavor of the sauce. That means that the sauce is the STAR. Yours looks delicious!

I love your breakfast too...

Yes, I also find couscous a bit dry and bland. I recently tried a recipe and it just wasn't working for me. I've got plenty of couscous left over though, so maybe I'll try your recipe.

Yeah, couscous often bores me but with the right spices and sauce, it's delicious. Yours is so golden and summery and i just adore that post expressionist palette for colours! Thanks for sharing, Vanessa x

I like couscous: its cheap, easy to make, and you can add a bunch of stuff to it to make it more tasty. Wow that breakfast looks delicious! How do you find the time in the morning lol

That dish reminds me of summer. Alas it's cold here.

Have you tried bulghur? Similar to cous couse, but better for you.
