Chocolate Madeleines

I know what you’re thinking, “That does not look like a Madeleine.” Here’s the thing: ever since I saw Heavenly Housewife’s Madeleine post, I’ve been craving this French treat. But the trouble was that I do not own a Madeleine pan and the closest thing to one I do own is a tartlet pan so I decided to use that.

One of the many things I admire about French culture is their heavy use of butter, which makes this little cake so divine. And one of the many things I like about this recipe is that it uses only six ingredients!

It took me about 10 minutes to measure out/mix this batter and another 10 minutes to bake. As soon as I got the pan in the oven I realized I forgot to add the almonds that I ever-so-diligently chopped, so I had to sprinkle them over the top instead. This actually turned out to be a good thing, as the almonds certainly made the Madeleines look festive.


To make one dozen you’ll need:

2 eggs

1/3 c confectioner’s sugar

2 tbsp cocoa powder

1/3 c flour

1 tsp baking powder

60 g butter, melted – plus extra for pan

¼ c chopped almonds (optional)


Procedure:

Preheat the oven to 350F. Grease the pan liberally with butter and set aside. In a bowl, whisk together sugar and eggs. Then sift flour, baking powder and cocoa into the mixture. Stir. Then add butter and stir until combined. Then fill each slot of the pan about 2/3 of the way and bake for 10 minutes. – Madeleines make a great pair with coffee, tea or milk.
