Tropical Chicken Salad

Life is too short to eat boring food and that’s why I love this salad – it’s not average. As I said before, I love the combination of sweet and savory. Chicken and pineapple are rarely found together but surprisingly they make for a very harmonious marriage.

I got the idea for this dish from my grandfather’s wife. She made it for us when we visited Ukraine in 2007. I didn’t think to ask her for the recipe at the time so I came up with my own.

This salad is great by itself but can also be eaten on crostini or in a wrap.

And yes, I know, I know! Another chicken recipe! Maybe I should start a chicken blog…hmm
(Obviously this picture is horrible, but you get the idea)

For 2 servings you’ll need:

1 boiled chicken breast, cubed

4 oz/about ¾ of a cup of pineapple, cubed

3 tbs. cilantro, chopped

2 tbs. finely chopped white onion

2 tbs. mayonnaise

½ tsp. salt

½ tsp. pepper

Combine all the ingredients and it’s done!

can you have a monthly sampling of all these recipes ? because i know i will never actually get up and cook all the things you have posted
