Strawberry Fields Forever

With the summer coming up, I’m sure many of you are striving towards that bikini body, which means diet and exercise. Yuck. I don’t know about you but eating rice cakes and iceberg lettuce makes me feel like a rabbit. So this recipe is for those of us who are looking to jazz up a boring diet repertoire or just want to eat a yummy salad!

The mixture of sweet and savory gives this salad a unique flavor. And it does not require cooking or even stirring.

For four portions, you will need:

Half a head of Romaine lettuce

1 cup of strawberries, that’s about 8-10 large ones

1/3 cup roasted almonds, chopped

1/3 cup Balsamic vinegar

1/3 extra virgin olive oil

A pinch of salt and pepper

Chop the lettuce and place on a platter so to make a bed for the other ingredients. Cut the strawberries down the middle and then again, and scatter evenly over the Romaine. Then sprinkle the almonds over the top.

In a separate bowl, combine the vinegar with salt and pepper. While whisking the vinegar stream in the olive oil. Pour this vinaigrette over the salad and presto! Wasn’t that simple?

By the way, the strawberries can be substituted with pineapple.
