Peanut Butter Brownies

Brownies are just one of those things that everyone likes. Some like them dense and chewy while others may prefer the fluffier, cakey kind. I don’t discriminate against either but I do love brownies with peanut butter. In fact, I like most things with peanut butter but that’s an entirely different subject.

My soft and chewy brownies are simple to prepare, and are great with milk or served with ice cream.

(Yield: 16 brownies)

Ingredients:

¾ cup flour

4 tbs. unsweetened cocoa powder

½ tsp. salt

2 eggs

2/3 cup sugar

1/3 cup vegetable or canola oil

½ tsp. vanilla extract

4 tsp. peanut butter

Preheat the oven to 350 degrees. Combine the flour, cocoa and salt in a bowl. Set aside.

In a larger bowl, whisk together the eggs and sugar until well combined. Add the oil and vanilla and whisk again. Now stir in the dry ingredients by halves. Do not overmix! Pour the batter into a greased and floured square baking dish. Spoon the peanut butter on top on the batter, in the direction of each separate corner. Using a butter knife, swirl (not stir) the peanut butter into the batter with figure-eight motions, in order to evenly distribute it. Bake for 20-25 minutes. Remove from oven and let cool 5 minutes. Then cut into squares and enjoy!

it seems hard to believe, as I'm a hardcore brownie lover and a peanut butter lover, but I've never heard of a peanut butter brownie before. yum.
