Green Beans - Jazzed Up

Green beans are not my favorite by any means. They are one of those foods that I frankly force myself to eat because of their nutritional value. They are low in calories and rich in vitamins and minerals. Particularly, green beans are high in Vitamin K, which helps promote strong bones. This recipe also calls for garlic, which besides being yummy has been proven to reduce bad cholesterol.

This recipe is obviously very simple and turns a boring vegetable into quite a delicious little side-dish.

Ingredient list:

2 tbs. extra virgin olive oil

About a pound of string beans

3 large cloves of garlic, chopped

1/3 cup of walnuts, chopped

Salt/pepper

Wash and dry the beans, trim their ends and cut them in half. Heat the oil in a large pan on medium heat. Add the beans and season well with salt and pepper. Cover loosely and sauté for 5 minutes. Stir in the garlic and sauté for 30 more seconds. Turn off the heat and stir in the walnuts. And you’re done!
